SERVICE:
- We recommend drinking it between 16 and 18ºC.
- Uncover a while before being served and, if possible, decant it
- This wine, due to its natural production method, may present a slight sedimentation at the bottom of the bottle.
- With good storage conditions, it can continue to evolve favorably for the next 5 years.
PREPARATION: Wine made exclusively at the “Les Torres” estate of our property. Its vines are grown in the upper part, with a south-west orientation, in a shoulder and on a semi-deep soil, with a clay-limestone texture, with a good mineral composition and well aerated. They have a minimum age of between 16 and 19 years.
The grapes, harvested separately and with a slight over-ripening by hand and in perfect sanitary condition, are quickly transferred to the cellar in 1000 kg hoppers. Once destemmed, it goes into stainless steel tanks, fermenting separately at a maximum temperature of 22º C. and with a maceration between 18 and 22 days, depending on each variety. It is transferred and then the malolactic fermentation begins.
After this, these varietal wines begin their aging in French Allier and American oak barrels; the first of 230 liters and the second of 300 liters.
After a stay of 5 months in these barrels, it is “blended” so that it continues to age in these same barrels until a maximum of 8,000 hours is completed.
After this time, it is decanted again and bottled, after a light filtration, to continue resting for a minimum of 6 months in order to achieve its personality and balance.
TASTING NOTE: Deep ruby in color, its delicate aroma denotes ripe red fruits and the cherry compote that marks the ripeness of the grapes.
In the mouth it is intense, powerful, good acidity, well structured and with a good balance of the woods in which it has been left. Aftertaste silky, harmonious and very long.
