PREPARATION: Wine made exclusively at the “Les Torres” estate of our property. The strains selected for its preparation are cultivated at an altitude of 270 m. Cultivated with the shoulder system on a semi-deep soil, with a clayey-limestone texture and with a good mineral composition, they are at least 15 years old.
When the harvest arrives, the grapes are collected separately and manually in 12 kg boxes, with a point of overripeness and in perfect sanitary condition. Once in the cellar, it is cooled to 4ºC in order to extract the maximum of its aromatic characteristics during its short maceration, draining the flower must into small stainless steel tanks and starting fermentation at a temperature of between 10 and 14ºC.
When a density of 1030 is reached, it is decubated and fermentation continues in new Allier French oak and American oak barrels of 300 liters, remaining in them in contact with the fine lees and batonnage until the month of December. After about 8,000 hours of permanence in barrel and with a slight filtration, it is bottled and still rests in this container for 3 months in order to achieve its balance.
Due to its composition and structure, this wine can continue to improve in the bottle for the next 3 years if kept in good conditions, although as a result it may leave a slight sedimentation in the bottle during this period of time.
TASTING NOTE: Deep golden yellow and straw in color, its aroma is of very ripe fruit (peach and pear), toasted caramel and pastry. In the mouth it is fleshy, structured, good acidity and good integration of the wood. Long fatty and intense aftertaste in the mouth.
